The Waterfall @ Shangri-La Hotel

Not too long ago, Shangri-La Hotel introduced a new restaurant, The Waterfall, specialising in Southern Italian cuisine. Yes, one more restaurant to find lip-smacking good pastas! On weekends, The Waterfall offers Italian brunches at $48 per head. Not too bad for free-flow pastas, pizzas and caprese I think! However, as I wasn’t in the mood for buffet, I opted for ala-carte instead. The menu has a wide variety of homemade pastas and pizzas – which can get rather mind-boggling, but it definitely gives you a reason to keep coming back!
The whole restaurant oozes the vibes of a beach resort. With cosy rattan arm chairs and tiled floors, the ambience was warm and cosy. It could even hold large parties of more than 10 pax with long tables available for reservation!
Just this bread alone will keep me coming back for more! The bread was buttery, extremely soft with an extra douse of cheese sprinkled on top. I regret not asking for an additional portion!
Insalata di Mare all’Amalfitana [Fresh seafood salad] ($23) – This is a salad for seafood lovers. Fresh shrimps and squids took the centrestage and the dressing was light and tangy to show off the freshness of the seafood. However, as this starter was seafood-laden, I felt that it could do with more greens to keep it more palatable.
Spaghettoni ai Ricci di Mare [Fresh sea urchin w tomato, olive oil, garlic & herbs w homemade spaghettoni] ($29) – Hearts were literally popping out from my eyes when I first set sight on this. Extremely robust in flavours, I could taste the fresh tomatoes and garlic all at once – while being laced by morsels of uni. If you take a close look at it, you’ll see that the chef is pretty generous with the uni!
Pizza Genovese [Shrimp, basil, pesto, homemade tomato sauce, mozzarella] ($29) – I guess you can consider this is a slice of the Italiano heaven in Singapore! The crust was soft, thin and chewy all at the same time. With a generous serving of mozzarella, the cheese cushions the fresh condiments to provide a mushy, gooey texture that is always so desirable in a pizza. The addition of basil really enhanced the flavours of the pizza in its entirety. If I had to be critical, I would think that the pizza could do with more prawns. Otherwise, it’s perfecto!
Torta Caprese [Flour & gluten free chocolate cake served w lemon sobert] ($16) – It was mentioned in the description that this cake will keep me coming back for more and sadly, it wasn’t true. Freshly baked upon order, the chocolate cake had the right amount of chocolate-y taste but its texture did not live up to its name. It was a confused souffle/sponge/lava cake.
Gelato ($2.50/scoop) – Try the Rum & Raisin flavour!
Melon Iced Tea ($8) – So, the server came over to our table with 3 drinks which we did not ordered, but looked enticing. We were told that this was the drink of the day and well, how could we resist it? Great marketing there!

A little bird told me that the steaks here are fabulous too and I absolutely can’t wait to return! Service here was impeccable, as per the usual Shangri-La standards. All I can say is, Bon Apetito!
